Avocado and Mango Salsa (vegan, gluten- and dairy-free)

It’s that time of year when fresh mangoes start appearing on shelves and I want to scream with happiness! They are so distinct and delicious, and in this recipe their unique flavor pairs well with another unique flavor, avocado. Vegan, gluten- and dairy-free, you’re gonna love this. Enjoy!

Makes 1 cup (enough for about 2 people to snack on or one really hungry person like me)

1 ripe, fresh avocado chopped into small pieces (medium-sized)

½ cup fresh mango, chopped into small pieces

10 cherry tomatoes, cut into small bits

1 tablespoon fresh squeezed lemon juice

¼ onion finely diced (I used a yellow one as I think they’re a little sweeter, but any will do)

1 banana pepper, seeds in and finely diced

¼ teaspoon garlic powder

Pinch of cayenne

Pinch of salt

(As to last two ingredients, you know yourself and your heat level, so use less or more based on your taste buds.)

Combine all ingredients and gently incorporate. Serve immediately with chips or just eat with a fork and enjoy!
