15 Bean soup (vegan, gluten-free, dairy-free)

If you didn’t know it, Hurst Beans is local to Indianapolis. Since that’s where I live and I like to promote local, I used their 15 Bean Soup® packet for this recipe. Plus, this is super easy. Enjoy!

1 package of Hurst 15 Bean Soup® bag (discard seasoning packet)

1 tablespoon garlic, finely minced

1 tablespoon yellow curry powder

1 tablespoon cumin

½ tablespoon of salt

2 large carrots (about 1 cup), rough chopped

2 large shallots (about 1 cup), rough chopped

8 cups of water

Place everything in a crockpot. Turn on high for about 5.5 hours. You’ll know it’s done when the largest bean is soft.
