Couscous with Pomegranate

It’s that time of year – pomegranate time! Here’s a great couscous dish, which is vegan, that you’ll love.

1½ cups prepared couscous (I used whole wheat organic, but use what you like)

13 cut up and fresh basil leaves

2 tablespoons cumin

1–15 ounce can of garbanzo beans, rinsed

½ cup salted sunflower seeds

½ teaspoon salt (use more of less depending on what you like)

1½ cups fresh pomegranate

Mix all ingredients together in a bowl except pomegranate. Incorporate. Fold in pomegranate. Enjoy!
